Fudge            Jerry Wade

 4 1/2 cups sugar

 pinch of salt

 2 tbls butter

 1 large can evap milk

 1 pkg (12 oz) semi-sweet choc chips

 12 oz german choc

7-8 oz marshmallow creme or fluff

2 cups nuts

 

Grate german choc in large mixing bowl (actually, I've found using the

microwave and melting it works just as well!) Add choc chips and marshmallow crème. Set aside.

 

Mix butter, sugar, salt and milk in saucepan. Bring to rolling boil (stir frequently as it tends to burn). Boil for 6 minutes.

 

Pour boiling mixture over choc/marshmallow and stir until well incorporated. Add nuts, then pour into large buttered pan until cool. Cut and store in jars or tins.

 

One batch makes about 5.5 pounds of fudge.

Triple batch is manageable, but more can become a bit cumbersome.
