big pot, keep the cover in the cupboard (nobody puts Baby in the corner, and nobody puts covers on chili pots)

hot grill, charcoal preferred, gas if you must

2.5-3 pounds

ground cow, made into ginormous patties

2 cans

Miller High Life (one for the chili, one for the chef)

medium yellow onion, chopped

4 cloves

garlic, minced

1 can

tomato sauce

1/4 cup, divided

ground red chile (pref. chipotle, not chili powder, which has extraneous ingredients that dilute the magic of ground chile)

1 ½ tbl

ground cumin

1 ½ tbl

Mexican oregano

2 tsp, divided

sea salt

1 tsp

Spanish paprika

1 can

pinto beans, drained

1 can

great northern (white) beans, drained
