COLE SLAW CRUNCH SALAD                                                               Jo Ellen Andersen

1 lb. cole slaw mix

2 pkgs. Ramen noodles - toasted and caramelized*

1 cup slivered almonds - toasted and caramelized*

1 cup sunflower seeds

1 bunch green onions sliced

Dressing:

1 cup oil

1/3 cup white vinegar

½ cup sugar

2 pkgs. Seasoning from Ramen noodle soup (beef flavor)

 

*To caramelize - heat in dry frying pan with approx. ¼ cup sugar, med. Heat, takes ½ hour, watch very carefully.  Stir often.

 

Prepare dressing, let stand at least 2 hours or overnight preferably.

Toast and caramelize almonds and Ramen noodles - broken into pieces.

Toss cabbage and onion.  Just before serving, add dressing, sunflower seeds, almonds and crushed noodles.
