HOLIDAY SALAD – Rose Roeland

Dressing – Prepare the day before.

1/2 cup sugar

1/3 cup lemon juice

2 tbl. Dijon mustard

1 tbl. poppy seeds

2 tbl. finely chopped onions

1/2  tsp. salt

2/3 cup oil

Salad

2 small bags lettuce (various kinds)

8 oz. Shredded mozzarella

1 – 1 1/2  cups cashews

1 1/2  cup craisins

2 cups chopped unpeeled apples

2 firm chopped unpeeled pears

Mix these ingredients well in a large bowl.

Toss with dressing just before serving
