Light and Easy Oriental Salad                                       Linda Peeters

Salad Ingredients:

1 head Nappa cabbage (8 cups), cut thin crosswise, or 1 large package cole slaw mix

1 bunch green onions (chopped), put in plastic bag

1 oz. package slivered almonds

3 oz. dry oriental low-fat ramen noodles (crumbled)

1 tbsp. sesame seeds

Dressing Ingredients

1/3 cup vinegar

1/2 cup sugar

2 tsp. canola oil

2 tbsp. soy sauce

1/4 cup chicken broth

Directions:

1. Brown almonds, ramen noodles and sesame seeds in 1 tsp. canola oil. Put in separate plastic bag.

2. Boil dressing ingredients for 1 minute. Cool. Shake before using.

3. Put the dressing and the salad items together just before eating.
