In a medium saucepan, :

1 C water

1/8 tsp. Salt

½ C butter

1 C flour

 

Boil water, salt, add butter, stir together, dump flour all at once, keep stirring until blended and forms a ball (keep in stove).  Take off stove for 10 min., add 4 eggs, 1 at a time, beat after each addition.

 

Drop puffs on a cookie sheet; size depends of filling.  Bake at 400 deg. 15-20 min. or 25-30 min. for larger ones.  Cool on wire rack.  Slice and remove the moist centers.  Usually fill within 12 hours with whipped cream or deli ham spread.
