Rice Krispie Roll Ups – Sara Holman

10 oz marshmallows
½ cup butter or margarine, divided
½ cup peanut butter
5 cups Rice Krispies
12 oz bag chocolate chips

Melt marshmallows with ¼ cup butter.  Once fully melted, stir in peanut butter.  Add Rice Krispies & mix well.  Press Rice Krispie mixture into a greased jelly roll pan. (I use a rolling pin to get it pressed in firmly as it makes it easier to roll.)

Melt chocolate chips with remaining ¼ cup butter.  Spread evenly over Rice Krispie mixture.  Starting on one of the long sides of the pan, carefully roll the chocolate covered Rice Krispies as you would a jelly roll.  Wrap the Rice Krispie roll in wax paper & refrigerate for at least an hour before slicing and serving.
